Cucumber and Watermelon Salad

I made this delicious salad for dinner last week.
With only 4 ingredients, it was a total cinch to make!
Sweet, sour and so so fresh tasting, 
it's the perfect hot weather recipe.


I got the recipe from my Everyday Foods cookbook 
(which everyone should own, seriously)

INGREDIENTS
  • 3 cups peeled and cubed (1/2 inch) English cucumber
  • 3 cups cubed (1/2 inch) seedless watermelon
  • 3 tablespoons fresh lime juice
  • Coarse salt and ground pepper

DIRECTIONS


In a large bowl, toss cucumber and watermelon with lime juice, 3/4 teaspoon salt, and 1/8 teaspoon pepper. Serve immediately.

** I added a little splash of sugar at the end. It was a little too bitter for my taste.
